Spinach Cauliflower Casserole

There was some frozen spinach and cauliflower waiting to be used and I put together a simple casserole. This will make a nice side dish for a light meal or one to take to potluck parties.

1 cup Cauliflower florets
1 cup frozen Spinach,thawed
1 Tbsp Garlic,finely chopped
1 Tbsp Extra Virgin Olive oil
1/4 cup milk
2 Tbsp grated Gouda cheese
salt to taste

1. Pre-heat oven to 375 F

2. Heat a pan on medium flame. Add 1/2 tbsp oil. Add garlic and saute till brown.Now add the florets and cook till the florets till they get a golden color.Add a bit of salt.Transfer contents to a bender and let it cool for a while.Add milk and puree the florets.Make sure the puree is not too thin or runny.

3. In the same pan, heat the remaining oil and add garlic. Once fragant,add spinach and saute for about 3 minutes.Add salt to taste. Cheese has salt too.So go less on the salt.

4. Transfer the spinach to a baking dish and pour the puree over it.Mix well

5. Sprinkle cheese  evenly over the mixture

6.Bake for 20 minutes or till the cheese melts.Serve hot.
